Destination Fish In a Champagne Beurre Blanc Sauce served with purple potatoes puree and crisp garlic broccolini.

Few fish in the ocean are as delectable as fresh tilefish. Often called “poorman’s lobster,” white meat tilefish fillets are mild, flaky and mouth-watering. While the dish may appear complicated, with only a handful of ingredients and minimal effort, you, too, can create this gourmet five-star meal that will leave you the talk of the town.

Skill Level (two out of five stars)

This gentle method of cooking your favorite fish retains all of the gentle flavors from the fish on your plate. It is best to use fairly hearty fillets (one inch thick) from grouper, mutton snapper, cobia, or any other white meat flaky fish. Fresh dolphin or wahoo steaks will work equally as well. Perfectly poached fish is fairly simple to prepare and requires less than fifteen minutes of cooking. This is a gentle, elegant dish full of mouth-watering flavors which anyone can prepare. The colorful dish can be served to guests at your next dinner party and also doubles as the perfect meal during any night of the week. Try it, you’ll love it!
