This gentle method of cooking your favorite fish retains all of the gentle flavors from the fish on your plate. It is best to use fairly hearty fillets (one inch thick) from grouper, mutton snapper, cobia, or any other white meat flaky fish. Fresh dolphin or wahoo steaks will work equally as well. Perfectly poached fish is fairly simple to prepare and requires less than fifteen minutes of cooking. This is a gentle, elegant dish full of mouth-watering flavors which anyone can prepare. Seafood Gazpacho

Seafood Gazpacho

 Method
-Bring court bouillon to boil. In a steamer basket, steam seafood until just finished and tender. Chill completely in refrigerator or ice bath. While seafood is cooling, roast corn and remove from cobs. Cut tomatoes and cucumbers into half-inch pieces. Chop cilantro coarsely. Drain garbanzos.

-Combine all ingredients except seafood, and mix well. Add seafood, cover, and refrigerate for a minimum of 4-6 hours or overnight if possible. Serve in chilled martini glasses as appetizer or in a bowl as main course. Garnish with chopped cilantro and/or green onion. Enjoy!
