Fritters are another of those well-loved fried breads characteristic of the South. A hallmark of many southern fritter recipes is the use of cornmeal in the batter.

1 6-1/2-ounce can minced clams
Milk
1 cup all-purpose flour
1/4 cup blue cornmeal
2 teaspoons baking powder
1/4 teaspoon salt
1 beaten egg
Shortening or cooking oil for deep-fat frying
Seafood cocktail sauce (optional)
