This gentle method of cooking your favorite fish retains all of the gentle flavors from the fish on your plate. It is best to use fairly hearty fillets (one inch thick) from grouper, mutton snapper, cobia, or any other white meat flaky fish. Fresh dolphin or wahoo steaks will work equally as well. Perfectly poached fish is fairly simple to prepare and requires less than fifteen minutes of cooking.
